Low Calorie 3 Course Meal
So one of the things that I have come across on my weight loss journey is that I am not willing to compromise the big things. I want to be able to celebrate birthdays, Valentines Day, Easter… but each of these holidays comes with a price; and that price is calories.
Food is ingrained into celebration and I don’t want to have to avoid seeing friends or a romantic dinner with my Jon, or have to starve myself for one meal. So I decided this Valentines day that I was going to do something about it. I created a luxurious 3 course menu with drinks that comes to under 1000 calories!
I have many cook books on my shelf so I spent a good time flicking through them, counting calories and making lists before I finally decided on this menu. We absolutely loved it and have vowed to make it for friends!
Starter: Scallops with chorizo and pea purée

Main: Lamb steaks with mint and broad bean salsa

Dessert: Sticky toffee pudding

Total Calories: 941 calories
We had a fantastic time, the meals were easy to cook, none of them took over 45mins and the clean up was just as easy too. It was a fabulous night and I look forward to creating more dinner party menus in the future!
